Every dish tells two stories — where it came from, and where we're taking it.
A kitchen born
from two worlds.
Chef Kenji Matsuda grew up between his grandmother's kitchen in Osaka and his father's fishing boat off the BC coast. Modavan is the restaurant he always wanted to cook in — a place where Japanese technique meets West Coast ingredients, without apology or pretence.
We opened in 2018 on West 4th with twelve seats and a simple idea: cook what we love, with what's best around us, and serve it to people who care. Six years later, the seats are fuller, the menu is deeper, but the idea hasn't changed.
